The Sopressa dei Colli Asolani®
con Filetto Intero, containing
a complete fillet, is processed
using the same procedure
outlined for the
“Sopressa dei Colli Asolani®
Dolce e all’Aglio”.
Additionally, a complete fillet
which has previously been
placed in a dry brine with salt,
pepper and other spices is
put within the cased blend.
The insertion of the fillet is
carried out manually.
It is aged for two to four months
depending on its size in rooms
ventilated by the pure breezes
descending the Piave river valley.
It does not contain
milk by-products and
is gluten-free.
